Let’s get this giant Jaffa cake started!

This had to be started early so that the jelly has time to set ready for when I get back from work. I didn’t want the Jelly to still be a bit runny at all when it got to pouring the chocolate over.
First task,¬†dissolve¬†the jelly cubes. Make sure you have a nice thick jelly. Also you will need two identical bowls. One to do the mixing and one greased bowl that you will use to set the jelly. You don’t want to put the jelly into the other bowl until it has completely cooled.
Once cooled pour into your other bowl and very very carefully place into the fridge to set. I actually placed it in the fridge and then topped it up once in there.

Right day of work complete. Time to get my cook on! First task is the make the sponge. Sadly I don’t have time to make a base from scratch. This normal easy make sponge should do the job with some added orange zest and vanilla extracts.
Add mix, zest, eggs and vanilla to a large mixing bowl. I don’t have a hand whisk so it’s time to get some exercise!

Time to get this puppy in the oven!
This has to be one of the best parts of baking.. Good thing we had a proper cake spoon to make sure I can get it all out!

It’s out of the oven. Now while this cools it time to cook some food for me and get ready for adding the chocolate.
Now the difficult part, time to get the jelly on to the cake.

It’s now time to start the final part of the construction the chocolate. I apologise at this point for the quality of the photos. Melting the chocolate is time critical and¬†stirring¬†and taking photos was not easy.

Now, what do you do with a massive jaffa cake? Of course you could try and eat it your self but I much prefer sharing so I took mine to work with me for the taste test.
